Aubergine in yoghurt
The Legendary Cuisine of Persia
1 clove garlic chop, fry       stir in
oil     Fry until golden brown on each side. Drain, cool. Cut into small cubes.
1 large aubergine Peel, cut into rounds 1cm thick. Sprinkle with last and leave to sweat at least 30 minutes. Dry.
salt and pepper  
175g greek yoghurt  
50g walnuts chop   garnish
fresh mint chop
