1.2kg topside of beef sear     Combine   Bring to boil on stove. Cook covered in moderate oven 2 hours, remove lid, cook further 1/2 hour.
50g butter     Cook until soft
3 onions slice
1 bottle white wine  
300ml water  
salt and pepper  
thyme  
bay leaf  
parsley chop
1 teaspoon tomato puree  
1kg carrots chop into chunks
cornflour dissolve in water   Thicken
parsley     sprinkle with parsley
Serves 5
Serve with potatoes
