Carrot cake
Mother's red book
4 eggs     Combine   Pour into 2 lined 20cm cake tins, bake in moderate oven 50-60 minutes. Cool.
375g butter melted
350g honey  
1 teaspoon vanilla essence  
2 cups wholemean flour sift   Mix well
2 teaspoons baking powder
2 teaspoons bicarbonate of soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon cloves
1/2 teaspoon cinnamon
4 cups carrot grated   Mix in
1 cup raisins  
1 cup walnuts chopped
honey frosting   Spread over
60g butter     Cream
1/4 cup honey  
125g cream cheese softened
1 cup powdered milk     Beat in
1/2 teaspoon vanilla essence  
dessicated coconut     Sprinkle over
Makes 2 20cm diameter cakes
The frosting is hideous, and the reason I always hated carrot cake. I suggest a simple lemon icing if one is needed at all.
