Creamed chicken with avocado

2 ripe avocados quarter, slice thinly Layer avocados on base of baking dish, spoon chicken mixture over, top with cheese. Bake in hot oven 20-25 minutes, or until sides start to bubble.
50g butter Make white sauce combine
50g plain flour
275ml milk
150ml chicken stock
150ml single cream
450g cold cooked chicken meat cut into small strips
1 tablespoon dry sherry  
lemon juice  
25g mild cheese grate
Serve with a crisp green salad
Serves 4
