Classic Australian fish cakes
The Spectator
9oz white fish Remove skin and bones.   Chop finely, or process. Shape into patties. Fry in butter in heavy frying pan over a gentle heat, 3 minutes each side.
4 medium potatoes Boil in their skins, mash.   Mix in.
1 egg  
2 tablespoons egg mayonnaise  
4 shallots chopped
2 tablespoons parsley chopped
2 tablespoons clarified butter Melt
Serve hot with sauce, or simply with lemon wedges.
