Girolles in cream

1kg girolles   Clean, trim   Rinse, dry, cut into pieces
small glass vinegar   Stand mushrooms in cold water with vinegar 15 minutes
100g butter     Fry 15 minutes or until mushrooms give up their water. Fry dry in a pan with a little butter.
parsley chop   Stir in
chervil chop
creme fraiche  
salt and pepper  
For four
Serve on triangles of toast, and garnish with parsley.
