Gratin Dauphinois

1/2 clove garlic     Rub shallow dish Place dish over heat until simmering, then bake in hot oven 20-30 minutes or until potatoes are tender, milk is absorbed and top is nicely browned. Can be left 1/2 hour, loosely covered, over simmering water.
1/2 oz butter     Smear
2 lb boiling potatoes Peel, slice 3mm thick. If prepared in advance, leave in cold water and dry before use   Put in two layers: potatoes then other ingredients
1 teaspoon salt  
1/8 teaspoon pepper  
4 oz Swiss cheese grated
1 1/2 oz butter  
1/2 pt milk boil   Pour on
For 6 people
To prepare in advance, bake until not quite all the milk has evaporated, and leave aside uncovered. When needed, dot with butter, reheat on stove, and bake in hot oven 5-10 minutes.
