Hoi Sin Chicken

3 tablespoons oil     Head gently 1 minute
2.5cm green ginger peel, grate
2 onions peel, roughly chop   Cook over high heat 1 minute
250g broccoli cut into small florets   Toss well 2 minutes
1 red pepper remove seeds, cut into 1cm squares
425g can straw mushrooms drain
sauce   Add
2 tablespoons hoisin sauce Combine
2 tablespoons dry sherry
1 tablespoon soy sauce
2 tablespoons brown vinegar
salt
1 cup water
2 chicken stock cubes
1/2 teaspoon sesame oil
3 teaspoons cornflour
chicken   Add, toss over high heat until sauce boils and thickens. Toss further 2 minutes.
1.5kg meat   Cut into small pieces, coast
cornflour
oil for deep frying   Deep fry a few pieces at time until golden brown and cooked, roughly 5 minutes. Drain well.
Serves 4-6
