Miso marinated sea-bass
You can't go wrong with either sea bass or this sauce.
Adapted from rec.food.recipes
2 sea bass fillet marinade 1 hour Fry in a little butter, skin side down, high temperature, 1 minute. Turn over, cover, reduce heat to moderate, cook 4 minutes or until fish just begins to flake.
3 tablespoons miso mix
1/2 cup rice wine
drizzle sesame oil
6 spring onions chopped
ginger grated
butter  
The original recipe calles for mirin, not rice wine, but I found that to concentrated.
May be served with sushi.
