Orange, onion and olive salad

sauce
2 large onions   slice
1 1/2 tablespoons oil   cook 10 minutes
1 1/2 teaspoons orange rind
2 tablespoons sugar   add, simmer uncovered 30 minutes or until thick
2 tablespoons vinegar
1 tablespoon white wine
1/3 cup orange juice
salad
50g watercress     combine with sauce
fresh thyme  
3 oranges segment   arrange over
1 shallot finely chop
feta cheese  
2 tablespoons olives  
2 tablespoons red wine     drizzle over
1 tablespoon olive oil
