Aunt Fannie's squash souffle
This recipe comes from a very creepy restaurant in Atlanta. Up until the 60s, this used to be where business people would take customers or visitors from up North to show them a bit of the "Old South". All the waiters and waitresses were black and all in all it was a very racist and uncomfortable place to eat. Thank goodness it's been closed for years, and also thank goodness that the restaurant published this recipe so many years ago.

3 lb yellow crook-necked squash Peel and cook until tender. Mash very well.   Mix. Pour into greased casserole dish. Bake in moderate oven one hour.
2 oz butter melt
1/2 cup onions chopped
1/2 cup breadcrumbs  
2 eggs beat
1 tablespoon sugar  
salt and pepper  
2 oz butter melt   Pour extra butter on top and sprinkle with more breadcrumbs.
