Zucchini Florentine
Cindy: This recipe started out as my mother's and true to all good recipes, rapidly became a staple of the rest of the family.

2 medium onions slice thinly   sauté Place in lightly greased casserole dish, sprinkle parmesan over. Bake 20 minutes in moderate oven until cheese is crusty and golden.
2 tablespoons butter  
2 lb small zucchini cut into 5mm slices   cook over low heat 5 minutes, stirring frequently
2 cups canned whole tomatoes crush   simmer 5 minutes
salt and pepper  
1/2 cup parmesan grated
