Feta frittata

. Serves 4. 11 steps
1 tablespoon olive oil gently fry 5 minutes or until softened   line a 20cm square cake tin (not loose-bottomed); tip vegetables in Bake in moderate oven 20 minutes or until frittata has set and is slightly puffy and golden brown
1 medium red onion finely chopped
1 red capsicum cut into 1.5cm chunks
1 medium zucchini trimmed, cut into 1.5cm chunks
100g feta small chunks   scatter over
8 eggs whisked   pour over
You can use an ovenproof dish, but it will take a little longer to cook
