125ml whole milk   beat Line a loaf tin (19×12×9cm) with baking parchment. Pour in batter. Bake at 170°C for 55 minutes or until a skewer comes out clean.

25g self-raising flour sift   mix in until fully incorporated
100g plain flour
pinch salt
100g caster sugar
1 teaspoon bicarbonate of soda
2 teaspoons ground ginger
1/2 teaspoon mixed spice
1/4 teaspoon freshly-ground pepper
125g golden syrup melt in a pan   pour on and mix until smooth and silky and glossy
60g margarine
The cake draws in moisture, and it's better if left for a day.
