Spinning kopita (spinach and cheese spiral)

This is a Greek new year dish. Put a coin in the filling; then at the table cut into wedges, spin the dish around, and give everyone the wedge facing them.
. Serves 7 as a starter. 12 steps
1 1/2 lb fresh spinach Wash, tear into bite-size pieces, discard stem. Steam 5 minutes. Drain well. Combine Create a fillo-wrapped spiral as follows. Lay down one or two sheets of pastry, depending on the size. (In the picture above I'm using one.). Spread filling down the long side, leaving some space at one end. Wrap into a spiral. Prepare the next roll. Slot into first roll. Repeat. Cook in moderate oven 45–60 minutes.
1/4 cup olive oil   Heat
3/4 cup green onions chopped   Cook 3 minutes
1/2 lb feta cheese crumbled
1 cup ricotta
2 tablespoons parmesan
2 tablespoons parsley chopped
4 eggs beaten
1/2 teaspoon nutmeg
salt and pepper
200g fillo pastry
butter   Brush
Once we didn't have ricotta, and used cottage cheese instead. It turned out delicious.
Goes nicely with a tomato salad.
