Classic vinaigrette

Makes 250 ml. 9 steps
3/4 cup oil More olive oil → grassier taste. More neutral vegetable oil → other flavours come through. mix
1/4 cup vinegar Red wine vinegar, or white wine, or apple cider; or lemon juice dissolve mix
salt
2 teaspoons Dijon mustard emulsifying agent, and for the kick mix
1 teaspoon honey makes mustard softer
optional flavour
ground pepper
ground paprika
shallot, chopped
garlic
