Waffles (with a hand mixer)

1 cup flour		sieve	Cook batter in hot waffle iron 4–5 minutes
1 1/2 teaspoons baking powder
3/4 teaspoon salt
3 egg yolks	beat	barely mix in
1 cup milk
3 tablespoons butter	melt
3 egg whites	beat until stiff	fold in

To test if the waffle iron is the right temperature, sprinkle cold water on it. The water should bubble. If it sizzles the iron is too hot.
