Aubergine parcels

. Serves 4. 7 steps
1 tablespoons olive oil   Fry until crisp Puree, season
1 large onion chop finely
2 tablespoons tomato puree   Stir in, cook on medium heat 5 minutes, cool
2 medium aubergines halve lengthways Prick, bake on greased baking sheet 40 minutes in moderately hot oven. Leave to cool, remove skin and stalks.
1 tablespoon curry powder
15g fresh coriander
75g natural yoghurt
Spoon into hot pitta bread, serve with lemon wedges
