Tomato sauce (ketchup)

450g tomatoes chop simmer, covered, stirring occasionally, until soft Simmer 30 minutes. Blend. Sieve. Bring to boil, simmer 15 minutes. Pour into warm sterilized bottles and seal.
225g apples chop
110g onions chop
1 tablespoon salt
140 ml vinegar
110g soft brown sugar
6 cloves tie in muslin bag, and bruise with a hammer
2 pieces ginger
12 peppercorns
1 chilli
To sterilize the bottle, wash it thoroughly then heat it in a moderately slow oven 20 minutes.
To seal the bottle, fill it with piping hot sauce leaving 1cm space from the top, screw on the lid immediately, and turn upside-down for a couple of minutes. Any delay may result in contamination or a weak seal.
