Lemon and mint sorbet

4 steps
400ml water   Pour boiling water over other ingredients and steep for 10 minutes
20g mint
1 lemon's rind
130g sugar
110ml lemon juice mix in
3 tablespoons mint chop finely
Freeze in ice cream machine
The original recipe called for 1.5 times as much sugar and lemon juice, and seemed too strongly flavoured. I haven't yet tried it with these quantities.
