Lime sherbet

. Makes 500ml, serves 5. 6 steps
120g sugar   heat to dissolve   freeze according in ice cream machine for 10 minutes, or until mixture starts to turn opaque and icy
150ml water
1/2 lime's zest   mix in
3 limes' juice
190ml semi-skimmed milk
1 egg white beat lightly with a fork   add in while machine is running
Can be frozen for a few days. Before serving, leave in fridge for 30 minutes.
