Piernik biscuits

This is a gingerbread-style piernik. See also the cake-style piernik.

1 tablespoon sugar   melt in saucepan, allow to caramelize Roll out dough on floured board, and cut out shapes. Bake in moderate oven for 15 minutes.
1/4 cup water   boil
2 cups sugar   dissolve
1 cup honey   bring to boil, leave to cool
1/2 teaspoon cloves
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
4 cups flour sift   knead very well, adding more flour as necessary to make an elastic dough; refrigerate 30 minutes
1/2 cup butter
2 eggs
1 teaspoon baking soda
1/4 teaspoon cream of tartar
