Saffranspannkaka (Swedish rice pudding cake)

This recipe is from Gotland, an island off the coast of Sweden, in the Baltic. I tasted this dessert in Visby, the main town, on a cold day when everything was blanketed in snow and the the streets were desserted. A slice of this dessert and a cup of coffee made a wonderful reviver.

5 eggs   beat Pour into tart tin. Bake in moderately hot oven 30 minutes or until set.
3 cups cream   beat in
2 cups milk
1/2 teaspoon salt
2 tablespoons sugar
1 pinch ground saffron
2 cups pudding rice cooked   mix in
blanched, quartered almonds
Serve with cloudberry jam and whipped cream
